Salted caramels with gingerbread and vanilla

Underbart goda (salta) smörkolor med pepparkaka och vaniljsmak.

// Soft, chewy, melt-in-your-mouth, caramels. I added some gingerbread and vanilla to give them a little touch of christmas.

Recept:

  • 100 g smör
  • 2 dl vispgrädde
  • 2,5 dl strösocker
  • 1 dl ljussirap
  • o,5 dl honung
  • 2 tsk vaniljsocker
  • 0,5 tsk salt
  • 100 g krossade pepparkakor
  • flingsalt

Blanda alla ingredienser (förutom pepparkakorna) i en kastrull. Koka ihop och värm till ca 125 grader. Krossa pepparkakorna och ha i dem i kolasmeten. Häll kolan på ett bakplåtspapper, strössla över flingsalt, och låt kolan svalna i rumstemperatur. Klipp i bitar och slå in i smörpapper.

Recipe in english:

  • 100 g butter
  • 200 g double cream / heavy cream
  • 250 g granulated sugar
  • 140 g light syrup
  • 70 g honey
  • 2 tsp vanilla extract 
  • 0.5 tsp salt
  • 100 g crushed gingerbread
  • sea salt

Mix all ingredients (except gingerbread) in a saucepan. Boil together and heat to about 257°F (125°C). Crush the gingerbread and add it to the caramel mixture. Pour the caramel on a baking sheet lined with parchment paper, sprinkle over sea salt, and allow the caramel to cool at room temperature. Cut into pieces and wrap in paper.
